The start of summer! Finally!

So it's August 2nd and summer has finally decided to join us!
The last two day's have been beautiful, and I couldn't be happier.
Well, except if this tooth ache would go away.
I got a dentist appointment on Tuesday, though, so I am super excited about that.
Me? Excited about the dentist? Yea. For the first time in my life, I am excited to go to the dentist.

Food has been scarce as my mouth has been so sore. But! At the same time, it's been delicious!
Last night I made Tomato, Roasted Garlic, Rice and Navy Bean Soup from Veganomicon. I didn't start cooking it until LATE, so I didn't eat dinner until almost 10, but let me tell you, WORTH THE WAIT!

The verdict? I LOVED it! The recipie called for crushed tomato's, but apparently I didn't pay attention to that, so I bought chopped. All good, I just threw em in the blender for a couple seconds.
It tastes a lot like ministrone. Which is good, because it's one of my favourite soups.
I enjoyed it lastnight out by my fire with my puppies (Who also enjoyed a little bit after it cooled down) with some jalapeno and cheddar corn bread cracker's. They are so delicious.

Breakfast this morning was a banana...yes, that's all. I'm not hungry today. However, I'm going to dive into another bowl of soup before I go to work today.

I have a surprise for one of my reader's....I'm not telling who it is, or what it is, but there's one that has been such a huge help and inspiration to me over the last year, and especially since my becoming vegetarian...so, to this special person-keep an eye out for some goodies coming your way soon!

P.S.S. Just when I thought this soup couldn't get any better, I just calculated it, and umm..yea, it's only 1pt for 1cup and a half! Amazing!

  1. Wow, soup sounds DELICIOUS. I'm slowly trying to become vegetarian. Gave up read meat and pork last October. Now I'm trying to eat less chicken and turkey. Hoping that by the New Year I will be there.
