My new fav salad!
1 can corn nibblets
1/2 cup black beans
2 tsp. olive oil
1/2 cup whole grain rice (optional, i add it so that i can make it more of a meal than a side dish)
Cook the corn.
Rinse and drain the black beans
Cook rice (if adding to salad)
Toss entire thing in 2tsp. olive oil.
Put the left over's in the fridge and eat it again tomorrow cold. It's just as delicious.
I have eaten it for the last 4 day's and am obsessed.
Wonderland tomorrow :) Yay!
